Burgundy
A bottle of crémant is about as close to a bottle of Champagne as you can get outside the most famous sparkling wine region, and this one from Parigot & Richard has all the charm and quality of the best. The winery is based in Savigny-lès-Beaune, in the Côte de Beaune region of Burgundy, and it sources fruit from vineyards there as well as in the Côte de Nuits, to the north. Parigot & Richard has specialized in sparkling wine since its founding in 1907, a time when sparkling wine in Burgundy was called vin mousseux. The domaine is now run by Grégory Georger, part of the fifth generation.
“Origines” is a blend of 40% Pinot Noir, 40% Chardonnay, and 20% Aligoté, from seven different plots. The wine is aged on the lees for 36 months, in the traditional method, and bottled unfiltered. Brut in style, with dosage at 7 g/l.
Notes of lemon and lime zest, ripe golden apple, brioche, and wet-rock minerality lead to a creamy, salty, lively finish. An excellent bottle of bubbles to pair with gougères or anything fried.
